Abstract

Tomat merupakan salah satu pangan fungsional yang memiliki antioksidan dan berfungsi sebagai pencegahan penyakit jantung. Antoksidan pada tomat berfungsi dalam pencegahan penyakit jantung dalam menghambat makrofag, pembatasan sintesis kolesterol, peningkatan kadar NT-pro BNP serum, peningkatan fungsi HDL-C, melindungi oksidasi LDL, fluiditas, dan permeabilitas dan melindungi fotosistem II. Antioksidan pada tomat memilki potensi terhadap pencegahan penyakit jantung.
